Healthy, Wealthy, and Wise


Two outta three….actually, the way I’m feeling today, I’m batting 0. But enough about how I’m feeling. Let’s get to the healthy thing here.

I posted about the vaping thing in Life is a Journey (the group Facebook page – head there to read the article…). It’s concerning me because I do vape occasionally and I find that when I’m not vaping, I have weird food cravings that I normally don’t have. What are your thoughts about that? Do you have a bad habit that affects your eating? I mean, some people drink and then eat too much…others maybe smoke and skip meals (that was me). I don’t want to make poor choices anymore. What about you?

Healthy. Yeah. Back to that.

I’m roasting some vegetables. I think ultimately the veggies will become a form of babaganoush. I’m a huge fan of it. I like eggplant. I also like garlic. I mean, it’s garlic.

Eggplant (two different kinds), onion, garlic, and heirloom tomatoes. I put a little olive oil over them (probably 2 tbsp) and some sea salt. I’ve got them in the oven at 275°. I’ll probably leave them in there for an hour, then when I take them out, I’ll toss them into a bowl and pulverize them or maybe in the food processor…or the Vitamix. With a little more olive oil. I want the consistency to be thick but not chunky. Vitamix. That’s what I’ll use.

I expect it will be a type of “dip” because I’m planning to get celery and cucumber tomorrow when I grocery shop. I might even get carrot sticks. I’ve got a red pepper and grape tomatoes too. My goal this week is to have my 2 shakes (breakfast and lunch) and then some veggies for a snack (instead of the pretzels I seem to feel I need). And a healthy dinner. I’d like to do that for a couple of weeks and skip the damn pretzels. It’s awful. I’m unable to resist salty snacks.

Oh, and I’m really trying to use local produce. The farm up the street grows 3 types of eggplant. The purple stuff, a lighter stripey purple type, and white eggplant. I bought the stripey and the dark purple. They also grow heirloom tomatoes. And corn, and okra (didn’t buy any of that), and peppers…all kindsa stuff.

I’ve probably done rambling about local and/or organic before. I guess at this point in life maybe we’ve all ingested way too many chemicals…but much like quitting smoking, I figure if I can start now and be as true and organic and kind as possible, maybe the health karma will descend on me. And while mom is 91, it’s never too late to make the food she eats as clean as possible. Just saying.

So that’s my health moment. Tell me what you’re doing this weekend. What have you made that’s healthy? Or not? How are you feeling? I’m gonna say, “You look fantastic” because well…you all do!
